Four words for fourth of july: brownie ice cream sandwiches

As June comes to an end and the temperatures start to climb, turning on the oven is almost sinful. It’s time to cast aside roasts, casseroles, and oven-roasted veggies in favor of chilled watermelon, pasta and potato salads, and grilled meats. Simply put: if you can put it on the grill or eat it cold, then that’s what’s for dinner. 

With July 4 just around the corner, temperatures in New York have been hovering in the 80s and 90s, with little sign of cooling down. Quarantine regulations are easing and many of us want to kick off the summer with small, socially distant celebrations. Thinking about how best to stay cool and eat well while spending some long overdue time with friends and family? We’ve got the answer: Brownie Ice Cream Sandwiches.

Simple, delicious, and oven-free, this festive treat will add some fireworks to your BBQ, picnic, outdoor movie night, or family reunion.

Here’s What You’ll Need:

·      Greyston Bakery Chocolate Fudge Brownie

·      Your favorite ice cream

·      Any July 4th goodies that you like

How to Make It:

Cut Chocolate Fudge Brownies in half lengthwise and set aside.

Take your favorite ice cream (we recommend Ben & Jerry’s, of course), let it soften at room temperature for about 15 minutes, then scoop and spread onto the bottom half of your brownie.

Top with the other half of the brownie.

Add goodies to your sandwich! 

Another no-bake dessert option we love – of course – is a plate of brownies, dressed up in red, white, and blue. Just take our Chocolate Fudge Brownie and use your favorite Fourth of July cookie cutter. Then cover with a frosting and decorations of your choice.

The great part about these recipes is that they’re easy and flexible. Get creative! We rolled our sandwiches in red, white, and blue sprinkles, and had fresh berries available, but you could also use chocolate sauce, ground cookies, nuts, or anything else your heart desires.
